A recent survey in the newspaper Sud-Ouest showed that local dishes remained most popular:-

  1. Magret de Canard (lean duck breast from a duck fattened for foie gras)
  2. l’Entrecote à la Bordelaise (steak in red wine with shallots)
  3. Cassoulet (rich bean casserole with duck/goose, sausage, pork and haricot beans)
  4. Poulet Basquaise – chicken with peppers, Bayonne ham, tomatoes, onion, garlic and white wine

Cuisine in the south west relies heavily on duck and goose fat – the best roast potatoes are cooked in duck or goose fat – it’s a little known fact that as well as tasting great, goose fat is also good for you in comparison to other animal fats.
