Exclusively white wines made from Chardonnay these are crisp and minerally dry wines in a range of qualities. The chalkland countryside of the area is attractive with the Chablis wine village (89 Yonne, Bourgogne) at its heart – and yet only an hour or so south of Paris down the A6 autoroute (about 2 hours from Paris Charles de Gaulle airport).

The wine domains, the boutiques and specialist shops, the luxurious hotels and restaurants all herald the visitor. Visit Domaine Michel Laroche in Rue Auxerre or their wine bar, boutique hotel, restaurant and shop, Hotel du Vieux Moulin (see above) in Rue des Moulins, to taste some of the best of local wines. Laroche offers a one day wine course, with lunch included.

Another cellar worth visiting is William Fevre in Rue Jules Rathier, in the old Chablis hospital. In the restaurant next door you can taste wines by the glass with each
regional dish. There is also a bistro-wine bar for less formal meals.

On Sunday mornings, the town is buzzing with a great atmosphere in the street market. The tourist office in the centre of town has bikes for hire with route suggestions for trips through the vineyards.
