cancale oysters

The fishing village of Cancale (35 Ille-et-Villaine, Brittany) lies on the Emerald Coast across the bay from Mont Saint-Michel. Cancale is recognised as Brittany’s oyster capital, due to the high-quality plankton that grows in the bay, feeding the oysters and helping in their reproduction.

There are two types of French oysters: the flat oyster :

  • (l’ huître plate), a native variety
  • the rounded oyster (l’huître creuse), which originally came from Japan.

Most of the oysters harvested in Cancale are the rounded style, When the tide is low, square oyster beds where the molluscs are farmed become visible .

There is an Oyster museum in Cancale La Ferme Marine. where visitors can learn more about Oysters and their production.

On 17 Sep 2022 there is an Oyster Festival (Fete de l’huitre) in Cancale – see www.brittanytourism.com
