Thus, over the centuries, they have gradually identified, delineated, and precisely named more than 1,200 Climats, protected since 1935 by the Appellations d\u2019Origine Contr\u00f4l\u00e9e (A.O.C.). It is this &#8220;Burgundian exception&#8221; that explains why, just a few meters apart, from one Climat to another, we obtain wines with different personalities [<a
