The village of Laruns<\/strong> (64 Pyren\u00e9es-Atlantiques, Nouvelle Aquitaine<\/em>) in the Ossau Valley celebrates with a Pyrenees Cheese Festival (Foire au Fromage<\/em>) 30 September – 1 October 2023<\/strong><\/span><\/p>\n\n\n\n

The Ossau-Iraty<\/strong> is a traditional cheese made from sheep’s milk in the Basque Country<\/strong> and B\u00e9arn<\/strong>.<\/span> It is recognized as AOC<\/strong> since 1980 and PDO<\/strong> (Protected Designation of Origin) since 1996.<\/span><\/p>

This classification requires that:<\/span><\/p>

the cheese  is made in a defined geographical area where transhumance is practised (i.e. the sheep and shepherds are moved down from the high mountain pastures into the lower valleys in the Autumn); only specified local sheep breeds are used; and that the sheep are free-range for <\/span>at least 240 days a year<\/span><\/em>
\nOssau Iraty<\/strong> is a hard sheeps milk (brebis<\/em>) cheese, and locals advise that it is best to cut this cheese and allow it to “breathe” a little before eating, as the cheese is allowed to mature for 60-90 days before sale. Local white wines such as Juran\u00e7on<\/strong> and Pacherenc du Vic Bilh<\/strong> and Iroul\u00e9gy <\/strong>go well with the cheese.<\/p><\/blockquote>\n\n\n\n

Laruns \/Vall\u00e9e d’Ossau<\/strong> lies about 40km south of Pau<\/strong> going up into the Pyren\u00e9es.<\/p>\n\n\n\n
