Beze Chitterlings and Gherkins Festival

Chitterlings & Gherkins Festival:

The village of Bèze (21 Côte d’Or, Bourgogne-Franche-Comté) holds a festival to celebrate local produce 15 – 16 August 2017Fête de l’andouille et des cornichons – sounds better in French! (now discontinued!)

andouilette sausageThe andouille and andouillette are often seen throughout France, and usually take the form of a sausage made from pigs intestines! Some consider it a great delicacy – although “delicate” it is not!

The cornichon is a small pickled cucumber – similar to the gherkin, but smaller and usually not as harshly acidic as a gherkin. They make an excellent companion to cheese and foie gras – the sharpness of the cornichon cutting through the fattiness of the andouille!

The usual jollities including crowning of the “Queen of the Andouille” and “King of the Cornichon”, a firework display and a middle-ages theme!

In France, particularly Brittany the traditional ingredients of andouille are primarily pig chitterlings, tripe, onions, wine, and seasoning. It is generally grey in color and has a distinctive odour. Also, a similar sausage is available called andouillette, literally “little andouille.” wikipedia
